November Holiday Meeting Recap

To get in the holiday spirit here is a fun and yummy recipe to enjoy:

- Payday Bars

2-16 oz jars salted, dry roasted peanuts (I used Planters)
PAM, cooking spray
aluminum foil
4 Tablespoons butter
2 cups Reese's Peanut Butter chips
1 can Eagle Brand Sweetened Condensed Milk
1 bag miniature marshmallows (I use Campfire)

Line a 9 x 13 pan with aluminum foil; spray foil with PAM cooking spray; spread 1 16 oz jar of peanuts in the
bottom of the pan; set aside the other jar of peanuts, but have them open for use.
In the top of a double boiler, or in a heavy pan slowly melt butter & peanut butter chips; add condensed milk to
heat; stir in marshmallows....stirring until just about melted.
Pour over peanuts and immediately pour 2nd jar of peanuts over melted mixture; press down peanuts with your
hands, pushing peanuts into all the gooey places that don't have any nuts;
Store in the refrigerator.  Cut into pieces to serve, after they have cooled (I like 2" x 2" when I am eating them
or .5 x .5 if you are taking them to a guild meeting).

Compliments of Sue James
